  • Medjool dates: Dates are a wonderful source of protein and iron and add natural sweetness to these energy bites. Dates can be found pitted and un-pitted; I like to buy the pitted dates for ease when chopping but taking the pit out really isn’t a hassle either!
  • Walnuts: Rich in omega-3s fatty acids and anti-inflammatory nutrients. They’re a great way to add extra nutrition and flavor to these bites. I like to store our walnuts in the fridge, covered and they will last up to 6 months or even frozen for 1 year.
  • Peanut butter: Choose a creamy peanut butter as opposed to a crunchy variety. Or, opt for almond butter or cashew butter.
  • Andes mints : I usually buy the rectangular mints wrapped in foil but you can also purchase them in baking chips now too. Either option works!
  • Oats: Use the quick 1 minute oats or oat flour. You can pulse the oats in a high powdered blender or food processor to make into a powder/flour.
  • Cocoa powder: Any unsweetened cocoa powder or your favorite cacao powder will work!

Step by Step Directions

These energy bites are really simple to make and only require a food processor and a cookie scoop! They come together in minutes and you’ll love how simple the clean up is too!

  1. Pulse dates in food processor.
  2. Add in the chopped walnuts, peanut butter, melted mint chocolate, oats, cocoa powder, honey, coconut oil, vanilla and salt.
  3. Process until combined.
  4. Use a cookie scoop to portion out the mixture and use your hands to form balls.
  5. Place on a parchment paper lined baking sheet and freeze for 10 minutes.
  6. Melt remaining Andes mints and coconut oil and drizzle over chilled bites.

Tips and Variations:

  • Use almond flour or almond meal in place of the oats or oat flour.

Mint Chocolate Brownie Energy Bites

Ingredients

Ingredients

  • 8 Medjool dates*, pitted and chopped
  • 20 Andes mints, divided (~1/4 cup melted)
  • 1 cup walnuts, pulsed
  • 1/2 cup creamy peanut butter
  • 1/3 cup cacao powder
  • 1/3 cup quick 1 minute oats or oat flour
  • 2 Tbsp. coconut oil, melted (+ 2 tsp. coconut oil for melting Andes mints)
  • 1 tsp. vanilla extract (can sub mint or peppermint extract for an even more minty flavor)
  • 1 tsp. honey (optional for a touch of sweetness)
  • 1/4 tsp. salt
  • flaky sea salt (optional)

Instructions

  • Melt 10 Andes mints with 1 tsp. coconut oil in a microwave safe bowl for ~30 seconds or until smooth. Set aside. 20 Andes mints, divided, 2 Tbsp. coconut oil, melted (+ 2 tsp. coconut oil for melting Andes mints)
  • Pulse walnuts in a food processor until crumbly. Set aside. Wipe food processor clean. 1 cup walnuts, pulsed
  • Add chopped Medjool dates to the bowl of a food processor and process until somewhat of a paste forms. 8 Medjool dates*, pitted and chopped
  • Turn machine off and add in the chopped walnuts, cocoa powder, oats, peanut butter, melted Andes mints, coconut oil, honey, vanilla and salt. Process again until a dough forms. 1/2 cup creamy peanut butter, 1/3 cup cacao powder, 1/3 cup quick 1 minute oats or oat flour, 1 tsp. vanilla extract (can sub mint or peppermint extract for an even more minty flavor), 1 tsp. honey (optional for a touch of sweetness), 1/4 tsp. salt
  • Use a cookie scoop to portion out the bites and roll mixture into a ball. Place bites on a parchment paper lined baking sheet and freeze for 10 minutes to allow balls to harden a bit.
  • Melt the remaining chocolate mints and 1 tsp. coconut oil in the microwave. Drizzle chocolate on top of chilled energy bites. (top with flaky sea salt, optional) flaky sea salt (optional)
  • Enjoy right away or store in an airtight container in the fridge for up to 1 week.

Notes

  • Soak Medjool dates in warm water for ~10 minutes to soften, if needed. Sometimes fresh dates are soft enough and you can skip this step!
  • Warm peanut butter in the microwave for ~30 seconds if it’s not very creamy or drippy.
  • Makes ~12-14 energy bites
  • Store bites in freezer safe bag for up to 2 weeks.
